Copycat Recipe

Here's a yummy recipe that provides enough for leftovers or is great for company.

Cafe' Rio (Utah based restaurant) Chicken

1 8 oz bottle Kraft Zesty Italian Dressing

1 Tbl chili powder

1 Tbl cumin

3 cloves garlic -minced

5 lbs chicken breast

Cook all together in a crock pot for 4 hours. Shred meat and cook an additional hour.

Cafe Rio Dressing

1 buttermilk ranch dressing packet

1 cup buttermilk

1 cup mayonnaise

2 tomatillos

1/2 bunch cilantro

1 clove garlic

juice of 1 lime

1 jalapeno (I don't use the seeds)

Use a food processor to blend all ingredients well. Refrigerate.

Heat tortillas and top with rice, black beans, Cafe Rio chicken, shredded cheese, avocado, and tomatoes. Drizzle with Cafe Rio dressing. Roll up the burrito and enjoy!

Kansas Sunrise

School Days

The kids are back in school now, and they love it! They had been counting down the days since June! Here are a few pictures of their 1st day. These were taken after school, since we had been out of town until about a half an hour before school started! But, we made it home and no one was late for school on the 1st day!! My kids are growing up WAY too fast!!

Boston Trip

Chase and Tara went to Massachusetts and spent a day in Boston. They took a sightseeing tour and learned about the history of the city. They had a great time.

Bellybuttons

Tate was eating this yogurt, and pulled a horrible face and said, "EEEEEWWWW!" I asked him what was wrong, and he replied, "This is made out of bellybuttons!" I had to reassure him that it was just a picture of a bellybutton, and that this yogurt will help your belly, and that it was not really made out of bellybuttons!!

Camping

For my birthday the 'rents and Aaron and I went camping on the Olympic Peninsula. This is Aaron and I kayaking on Lake Crescent - a beautiful area!

When I woke up Saturday mornging, I began singing "happy birthday to me" and our neighbors heard, so later they brought me this bouquet and sang me "happy birthday" in German.


Bailey thought she needed to explore every grain of sand and was determined that Mom needed to go with her.


Dad was practicing his roping skills on Willey. Willey did NOT like that game.

Bikin'

Scot & I went on a ride to Montana with some of my family, and it was a great ride. We went through Virginia City, Quake Lake, Hebgen Lake, and West Yellowstone. It was such a beautiful ride! I didn't know anything about Quake Lake, but I guess back in 1959, there was a powerful earthquake (7.5 on the Richter scale) that triggered a massive landslide, which sent over 80 million tons of rock down into the canyon. It blocked the Madison River, and formed the new Earthquake Lake. 28 people died, and hundreds more were trapped. One of my aunts was camping with the young women there, and in the middle of the night, the bishop had a feeling that they needed to leave, so they woke everyone up and packed there stuff and left. About a half hour or so later, the campground was completely buried. It was a really neat place to go visit.
